PHILIP'S HOMEMADE EGG NOODLES 
2 c. flour
3 egg yolks
1 egg
2 tsp. salt
1/4 to 1/2 c. water

Measure flour into bowl; make well in center and add egg yolks, egg and salt. With hands mix thoroughly. Add water 1 tablespoon at a time mixing thoroughly with each addition. Add only enough to form dough into a ball.

Turn dough on well floured cloth-covered board. Knead until smooth and elastic 10 minutes. Cover and let rest 10 minutes then either roll out into a paper thin rectangle and cut into strips or follow the directions on a pasta machine and roll into a #4 setting before cutting.

Cook in boiling salted water to taste. If not using noodles immediately either let dry until hard and store in paper bag or freeze.
