BAKED RICE CUSTARD 
2 c. milk
3 eggs
1 c. sugar
1 c. cooked rice
1 tsp. vanilla
1/2 tsp. nutmeg

Scald milk in saucepan. Do not boil. Beat eggs slightly. Add sugar; mix slowly. Stir in hot milk. Add rice and vanilla (1/4 cup raisins may be added if desired.) Put mixture in 2 inch deep casserole. Sprinkle with nutmeg. Bake at 325 degrees for 50 minutes until firm.
