CABBAGE SALAD MOLD | |
2 c. grapefruit juice 1 env. unflavored gelatin 2 tbsp. sugar 1/4 c. shredded carrot 1/2 c. coarsely shredded red cabbage 1/4 c. chopped sweet green pepper 1 c. coarsely shredded green cabbage 1/2 tsp. grated yellow onion Pour 1 cup of the grapefruit into a large heat-proof bowl and sprinkle the gelatin over it. Let soften for 2-3 minutes. Meanwhile, pour the remaining grapefruit juice and the sugar into a small, heavy saucepan and bring to a boil over moderate heat, stirring occasionally to dissolve the sugar. Add to the gelatin mixture and stir until the gelatin dissolves completely. Chill until the mixture is the consistency of unbeaten egg whites (about 1 to 1 1/4 hours). Fold in the green and red cabbage, carrot, green pepper, and onion; turn the mixture into an ungreased 4 cup decorative mold. Cover and chill until set. |
