LUSCIOUS PUMPKIN CAKE | |
3 1/2 c. sifted flour 2 tsp. baking soda 2 tsp. salt 1 tsp. baking powder 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. ground allspice 1 tsp. ground cloves 3 c. sugar 1 c. cooking oil 4 eggs 2 c. mashed pumpkin 2/3 c. water 1 c. molasses Sift together flour, baking soda, salt, baking powder, cinnamon, nutmeg, allspice and cloves. Beat together sugar, oil and eggs until light and fluffy. Add pumpkin and blend well. Add dry ingredients alternately to pumpkin mixture with water, beating well after each addition. Pour batter into greased pans. Bake at 350°F for 1 hour or until toothpick inserted in the middle comes out clean. Cool on rack. Makes two 9 x 5 x 3 loaf pans, 1 (9 x 13) or 2 Bundt pans. |
