JOHNNY APPLESEED CAKE 
TOPPING:

4 c. sliced apples
3/4 c. light brown sugar
1/4 c. butter
1/2 tsp. cinnamon

Melt butter in 8 or 9 inch square pan. Combine brown sugar and cinnamon. Add to butter. Pat evenly over pan. Add apple slices.

BATTER:

2 eggs
1 c. sugar
1 tsp. vanilla
1/4 tsp. salt
1 tbsp. butter
1/2 c. milk, heated
1 c. flour
1 1/2 tsp. baking powder

Beat eggs until thick, lemon color. Add sugar gradually, beating well. Add vanilla. Add butter to hot milk and let melt. Add flour mixture and egg mixture alternately with milk. Batter will be thin. Pour batter over apples. Bake 40 minutes at 350 degrees. Cool in pan 10 minutes. Run spatula along side. Turn cake onto serving plate.
