IRISH SODA BREAD | |
2 c. sifted flour 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 tbsp. sugar 1/4 c. chilled butter 1 c. raisins 2 tbsp. caraway seeds 1 beaten egg 2/3 c. buttermilk Preheat oven to 375 degrees. Sift dry ingredients. Cut butter into flour with a pastry blender until the mixture has the consistency of coarse cornmeal. Stir in raisins and caraway. Mix egg and buttermilk. Add dry ingredients and stir well. Knead briefly and place in a greased 8 inch round pan. Press down so dough fills pan. Cut a cross in the top so bread will not crack while baking. Bake 35 to 40 minutes. |
