BEAN SOUP 
2 c. mixed beans
1 qt. water
2 c. tomato juice
2 c. low sodium chicken broth
1 lg. onion, chopped
1 clove garlic, minced
3 tbsp. parsley
1/4 c. green pepper
2 tbsp. brown sugar
1 tsp. salt
1 tsp. crushed bay leaf
1 tsp. oregano
1/4 tsp. crushed rosemary leaves
1/4 tsp. celery seeds
1/4 tsp. thyme
1/4 tsp. marjoram
1/4 tsp. sweet basil
Juice of 1 lemon

Wash beans and simmer in 1 quart of water for 1 hour. Add more water, if needed. Add all other ingredients and simmer 3 hours or until beans are tender. Garnish each serving with chopped onions.
