COTTAGE CHEESE ENCHILADAS 
FILLING:

1 c. lg. curd cottage cheese
1/2 c. minced onion or chopped green onion
1/4 c. Monterey Jack cheese, cubed
1/2 c. chicken, turkey, or beef (optional)

Combine above ingredients; mix well and set aside.

1 pkg. tortillas
Oil for frying

SAUCE:

3 cans prepared enchilada sauce

2 tbsp. oil
1 med. onion, chopped
3 (8 oz.) cans tomato sauce plus
1 1/2 tsp. chili powder
1 1/2 tsp. oregano
1 tsp. salt

Top with coarsely grated American cheese. Pop in oven for short time.
