CHICKEN CHOW MEIN 
2 chicken breasts, boned & skinned
2 tbsp. butter
1 1/2 c. celery, sliced
1 c. onion, chopped
1 c. chicken broth
1/4 c. soy sauce
2 tbsp. cornstarch
1/4 tsp. ground ginger
1 can Chun King chow mein vegetables
1 pkg. chow mein noodles
Minute rice

Cut chicken in 1/2 inch squares. Brown chicken on all sides n butter about 5 minutes. Add celery, onion and broth. Cover and simmer 10 minutes.

Combine soy sauce, cornstarch and ginger. Blend into chicken and stir until bubbly, stir in Chun King vegetables. Cover and stir occasionally for 5 minutes. Serve chow mein over rice and noodles.
