PEAR CAKE 
4 c. fresh diced pears
2 c. sugar
2 eggs, separated
1 c. oil
1 c. chopped pecans
2 1/2 c. self-rising flour
1 1/2 tsp. cinnamon

Preheat oven to 350 degrees. Grease and flour tube pan. Mix together pears and sugar. Set aside. Beat egg whites until stiff, then add egg yolks and oil. Mix well. Set aside.

Combine flour, cinnamon and nuts. Pour egg mixture over pears and sugar. Mix thoroughly. Add dry ingredients, stirring with spoon. Pour into pan. Bake for about 1 1/2 hours or until dry on top. Remove from pan at once and drizzle with glaze.

GLAZE:

1 c. confectioners' sugar
Juice from 1 med. lemon

Mix together and pour on cake.
