HOMEMADE VANILLA ICE CREAM 
4 eggs
2 1/4 c. sugar
5 c. milk
4 c. heavy cream (not H.P. Hoods)
4 1/2 tsp. vanilla
1/2 tsp. salt

Beat eggs, add sugar a little at a time, keep beating until mixture is very stiff. Add rest of ingredients and mix well. Pour into freezer can. Allow 25 minutes preparation and 345 minutes using rock salt.

Variations:

Chocolate Chip: When ice cream is mush, about 15 minutes, add 1 2/3 cups grated or chopped semi-sweet chocolate and continue freezing.

Peppermint Candy: Same as chocolate chip except add 1 1/2 cups crushed peppermint stick candy instead of chocolate.

Chocolate: Use recipe above except reduce sugar to 1/3 cup and milk to 3 cups. Add 3 cups of chocolate syrup to recipe.

Fresh Fruit: Substitute 4 cups puree sweetened fruit, peaches, strawberries or raspberries or 3 (12 ounce) packages of frozen fruit thawed and mashed, for 4 cups of milk in recipe. Reduce sugar in recipe to 1 3/4 cups. Use 2 1/2 teaspoons vanilla.
