GINGER SCALLOPS 
1 lb. fresh scallops
1 tbsp. butter
1 tsp. ginger, finely chopped
2 oz. white wine
2 tsp. parsley, finely chopped
Juice of 1/2 lemon
Salt & pepper to taste

Saute scallops in butter and ginger until firm and white. Add remaining ingredients and continue to saute for 1 minute more. Serve alone or over rice.
