FANTASTIC CHICKEN ENCHILADAS 
1 (8 oz.) sour cream
2 c. grated Monterey Jack cheese
2 1/2 c. chicken, cooked and cubed
12 - 15 corn tortillas
1/3 c. fresh green onions, chopped
2 c. chicken broth
Basic white sauce made from broth

Cook chicken and save broth. Make basic white sauce and use broth. Soften tortillas in a little hot oil. Sprinkle cubed chicken, onion and small amount of cheese in tortilla and roll up. Pour 1/3 of white sauce in bottom of 9 x 13 inch pan. Place rolled tortillas on top of white sauce. Pour remaining white sauce over rolled tortillas and sprinkle remaining cheese. Green chilies or black olives can be used for garnishing and added flavor. Bake at 350 degrees for 30 minutes, covered.
