MEXICAN ONION - BEEF SKILLET 
1 1/2 c. chopped onion
1 lb. ground beef
1 (10 oz.) can enchilada sauce
1/4 c. water
Salt
1 1/2 c. corn chips
Cheddar cheese, grated

Saute onion with ground beef or 10 minutes or until onions are tender. Stir in enchilada sauce and water. Add salt to taste. Simmer 5 minutes. Stir in corn chips. Cover and let stand 5 minutes. Sprinkle with grated Cheddar cheese.
