RICE STUFFING FOR THANKSGIVING TURKEY | |
2 lbs. lean ground beef 2 c. white pearl rice 2 tbsp. butter 1 c. pine nuts and or blanched almonds 2 tsp. salt 1/2 tsp. pepper 1/2 tsp. allspice 1/2 tsp. cinnamon 1/2 tsp. nutmeg 4 c. chicken broth, heated 1/2 c. raisins Brown meat in butter. Add rice, salt, and spices. Stir 2 minutes over medium heat. Add the heated broth and raisins. Bring the mixture to boil. Cover and simmer over low heat for 25 to 30 minutes. Add the sauteed pine nuts and or blanched almonds. Mix well and cool. When thoroughly cooled, stuff the cavity of the turkey with rice mixture. Bake the turkey as usual according to weight. |
