POACHED SALMON 
2 salmon fillets or steaks
3/4 c. half & half or milk
3/4 tsp. chives, basil, or chopped dill (fresh)
Salt & herbs

Preheat oven to 350 degrees. Place salmon in a shallow oven-proof dish and pour in the milk (or half & half) so that fish is half immersed. Sprinkle with herbs and salt (if you wish). Bake for 30 minutes, occasionally spooning some of liquid over fish. To check for doneness, cut into center. When fish is mostly pale pink but still a bit darker pink in the center, it is done.

Serves 2.
