POACHED SALMON 
2-3 lb. salmon fillet (skin on)
3 slices lemon
2 thick slices red onion
4 c. water

Put onion and lemon in open skillet with water and heat to boiling. Add salmon, skin side down, bring back to boil and simmer 10 minutes or until salmon flakes. Lift out with turner and drain on paper towels. Serve cold with mustard sauce.

SAUCE:

1/3 c. Dijon mustard
1/3 c. olive oil
1 tbsp. sugar
2 tbsp. white vinegar
2 tsp. dill weed
1/4 tsp. salt

Mix well, cover and refrigerate until use on cold salmon.
