FRESH PEAR COFFEECAKE OR FRESH
APPLE COFFEECAKE
 
3/4 c. sugar
1/4 c. butter
1 tsp. vanilla
3 egg whites or 1/2 c. egg beaters
1 3/4 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cardamom
1/4 tsp. salt
1 c. low fat sour cream
2 c. unpeeled pears
Streusel
Glaze

Heat oven to 350 degrees. Spray 13 x 9 inch pan with non-stick cooking spray. Beat sugar, butter, vanilla and egg whites in a large bowl at medium speed 2 minutes, scraping bowl occasionally. Mix flour, soda, baking powder, cardamom and salt. Mix alternately with sour cream on low. Fold in pears. Spread in pan. Sprinkle with streusel. Bake 45 to 55 minutes or until toothpick comes out clean. Drizzle with glaze. You may use apple and cinnamon instead of pears and cardamom.
