SWEET POTATO PIE 
Unbaked pastry for 1 (9") pie shell
2 (1 lb.) cans sweet potatoes in syrup, drained
3 eggs, yolks & whites separated
1/2 c. milk
1/2 c. sugar
2 tbsp. butter, melted
1 tsp. pure vanilla
1 tsp. ground nutmeg
1/8 tsp. salt

Preheat oven to 400 degrees. Line 9" pie pan with pastry and flute edge. Mash sweet potatoes in an electric blender or with a potato masher. In large mixing bowl combine potatoes with egg yolks, milk and sugar, melted butter, vanilla, allspice, nutmeg and salt. Mix well. Beat egg whites until stiff, but not dry. Fold into sweet potato mixture. Turn into pie shell. Bake for about 40 to 50 minutes. Pie is done when a knife inserted into center comes out clean. Makes 1 (9") pie.
