CREAMY PASTA SAUCE WITH HERBS 
1 1/2 c. heavy cream
1/2 tsp. salt
Pinch of cayenne
Cheese
1 tbsp. finely chopped herbs
4 tbsp. sweet butter
1/8 tsp. nutmeg
1/4 c. grated Parmesan

Combine cream, butter, salt, nutmeg and cayenne in a heavy saucepan and simmer for 15 minutes or until sauce is slightly reduced and thickened.

Whisk in Parmesan and herbs and simmer for another 5 minutes. Taste and correct seasoning. Serve immediately.

2 cups sauce, enough for 1 pound of angel hair pasta, 6 or more portions as a first course.
