FRENCH PANCAKES 
1 1/2 c. unbleached flour
1/2 c. soy flour or unbleached flour if you don't have soy flour
4 tsp. baking power
3/4 tsp. salt
4 eggs
2 c. milk

Mix the flours, baking powder and salt; beat the eggs and milk together then add to the dry ingredients and mix. Make sure there are no lumps in the batter. Melt a teaspoon of butter in an 8 inch skillet. When hot, pour in just enough batter to cover the bottom of the pan. Cook over medium heat until golden brown then turn and cook the other side. Top with syrup, jelly, or applesauce. Makes 12-16 pancakes.
