QUESADILLA | |
6 (6 inch) flour tortillas 1/2 c. green bell pepper, diced 1 ripe med. avocado, peeled, pitted & sliced 1 1/2 c. (6 oz.) low-fat mozzarella cheese, shredded 1/2 c. fresh basil, chopped 1/2 c. red bell pepper 1 lg. tomato, diced Cook tortillas in nonstick pan until crispy. Remove and top with equal portions of cheese, green and red bell peppers, tomato and fresh basil. Place tortillas on a cookie sheet in a preheated 300 degree oven for approximately 10 minutes or until cheese is bubbly. Cut quesadilla into 6 slices and top with a slice of avocado. |
