LUSH RHUBARB PIE 
2 c. flour
2 tsp. sugar
1 tsp. salt

Combine 2/3 cup oil with 3 tablespoons milk. Mix with flour. Take out 1/3 cup and save. Using hands, press the mixture on sides and bottom of pan.

3 c. chopped rhubarb
1 1/2 c. sugar
3 tbsp. flour
1 tbsp. butter

Add 2 well beaten eggs. Mix well. Pour in crust and top with remaining crumbs. Bake at 400 degrees for 15 minutes, then at 350 degrees for 30 to 40 minutes.
