HOMEMADE FIRE ROASTED TOMATOES 
For extra flavor, use these wherever tomatoes are called for in a recipe.

6 tomatoes
olive oil

Cut tomatoes in half. Coat each half with olive oil. Place cut-side down on a baking sheet.

Roast in oven at 250°F until soft and just begin to exude juice, about 1 1/2 hours. Cool completely.

Remove the skins. Pack into a container. Cover with olive oil.

They will keep refrigerated for several days.
