POTATO PANCAKES 
6 med. potatoes
1 sm. onion
3 tbsp. matzo meal, flour, or bread crumbs
1 tsp. salt
1 egg
1/2 tsp. baking powder

Wash, pare, and grate raw potatoes; strain. Grate onion into potato mixture. Add salt, eggs, baking powder, and matzo meal, bread crumbs or flour to the potatoes and mix well.

Heat cooking oil in a skillet (deep enough to almost cover pancake). Drop the potato mixture by spoonfuls into the hot oil. Brown to desired crispness on both sides. Drain thoroughly on paper towels and serve. (Yield 4-5 servings)
