MIKE'S LEGENDARY BANANA BREAD 
1 3/4 c. flour
1 1/4 tsp. baking powder
1/2 tsp. baking soda
2/3 c. sugar
1/3 c. butter
2 eggs
1 1/2 tbsp. milk and 1 tsp. rum extract OR
2 tbsp. milk
2 very ripe bananas (med. to lg. or 3 sm.)
3/4 to 1 c. semi-sweet chocolate chips

Beat sugar and butter together well. Add the eggs, milk and rum extract while blending. Add one banana and gradually beat in about half of the flour. Add the other banana and gradually the rest of the flour. Beat until smooth, then fold in chocolate chips as desired. Pour batter into a greased loaf pan. Bake at 350 degrees for about an hour. Check with a toothpick for doneness (if it comes out clean, the bread comes out too cool!) Let cool in pan for about 5 to 10 minutes, turn out and cover with a towel while it cools. It tastes better the older it gets (to a point) !
