CRANBERRY NUT BREAD 
Nut breads are a happy holiday thought. They will taste even better and be easier to slice if they are tightly wrapped and set aside for a day.

2 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
3/4 c. orange juice
1 tbsp. grated orange rind
1 egg, well beaten
1/4 c. butter, melted
2 c. cranberries, coarsely chopped or halved
1/2 c. chopped nuts

Sift together flour, sugar, baking powder, soda and salt. Combine orange juice, rind, egg and melted butter. Add to dry ingredients and mix only until flour mixture is moistened. Carefully fold in cranberries and chopped nuts. Spoon into 2 greased loaf pans and bake in a 350 degree oven 1 hour.

One bag of chopped cranberries is enough for four recipes. Use 1 cup of chopped cranberries for each recipe instead of 2 cups.
