2 pecks hard country pears 5 lb. sugar 2 to 3 tbsp. fresh lemon juice Wash, peel and core pears. Slice into long fingers and place in a large container. Cover with sugar and set aside overnight. In a large pot, combine pears and accumulated liquid and lemon juice. Bring to a boil, stirring constantly. Reduce heat and simmer 2 to 2 1/2 hours or until syrup is thick and golden and pears are transparent. Pour into hot sterilized jars and seal. Makes 9 pints. |
