MEXICAN LASAGNA 
1 lb. ground beef, browned & drained
1 (16 oz.) can whole tomatoes, cut up
1 pkg. taco seasoning
1 can French fried onions
1 (12 oz.) cottage cheese
1 1/2 c. Cheddar cheese, shredded
2 eggs, slightly beaten
12 flour or corn tortillas
1 tomato, chopped
Lettuce, shredded

Add canned tomatoes and taco seasoning to beef; simmer, uncovered, 5 minutes. Stir in half the can of French fried onions. In bowl, combine cottage cheese, 1 cup cheese and eggs. Place 3 tortillas on bottom of greased 8 x 12-inch dish. Overlap 6 tortillas around sides. Spoon meat mixture in dish; top with 3 tortillas and then cheese mixture. Bake, uncovered, at 350 degrees, 45 minutes. Sprinkle with remaining cheese and onions. Bake, uncovered, 5 more minutes. Arrange tomatoes and lettuce on top.
