PINEAPPLE UPSIDE DOWN CAKE 
1/4 c. melted butter
1/2 c. firmly packed brown sugar
1 1/2 c. crushed pineapple
1 c. sifted cake flour
1/2 tsp. salt
3/4 c. sugar
1/4 c. oil
1/2 c. skim milk
1 1/2 tsp. baking powder
2 egg whites, unbeaten
1/2 tsp. vanilla

Preheat oven to 350 degrees F.

Pour melted butter into an 8 inch square pan or iron skillet. Sprinkle with brown sugar and line bottom of pan with crushed pineapple.

In a mixing bowl, sift together the flour, salt and white sugar. Add the oil and 1/4 cup milk. Stir until flour is dampened, then beat 1 minute. Stir in baking powder and remaining milk, the egg whites and vanilla. Beat for 2 minutes.

Pour batter over crushed pineapple and bake 35-40 minutes. Remove from oven, cool slightly and invert onto a serving plate.
