SALSA 
33 lg. tomatoes, peeled and chopped
2 (1 lb.) cans chilies, roasted and diced
4 c. onion, chopped
4 tsp. cumin
4 lg. garlic cloves, diced
3 tsp. pepper
7 tsp. salt
1 tsp. red pepper flakes
6 drops red food coloring

Simmer all ingredients for 2 1/2 hours. Pack in hot jars. Water bath for 15 minutes. Makes about 15 pints.
