PUERTO RICAN CHICKEN BREASTS 
3 whole chicken breasts, boned, skinned & cut in half
1 tsp. garlic
1 tsp. onion salt
1 tsp. oregano
Dash of pepper
3 oz. Monterey Jack cheese
6 slices bacon
1/4 c. white wine
2 tbsp. vinegar
2 tbsp. olive oil

Place chicken between sheets of wax paper and pound with rolling pin to flatten. Remove paper. Stir the first 4 ingredients together. Sprinkle half of seasonings over chicken breasts. Cut cheese into 6 narrow strips, place a piece of cheese on each piece of chicken and roll up. Wrap each chicken roll with strip of bacon.

Place in a shallow baking dish. Stir together wine, vinegar and olive oil. Pour over chicken. Sprinkle rest of seasoning over chicken. Bake at 375 degrees for 40-45 minutes until golden brown. Serve with seasoned rice and tossed salad.
