POTATO PANCAKES | |
1/2 c. sifted flour 1 tsp. salt 1 tsp. baking powder 1/8 tsp. white pepper 1 egg 1/2 c. milk 2 tbsp. melted butter 1 tbsp. grated onion (opt.) 1 1/2 c. finely grated raw white potato (grate potato just before ready to use as it will darken by standing) Preheat closed grill at No. 4 setting. Meanwhile sift together into mixing bowl flour, salt, baking powder and pepper. Add egg, milk, melted butter, grated onion and grated potato. Beat with electric mixer or hand beater until blended. Open grids, brush with melted butter, drop potato mixture by tablespoons onto grids, spreading out each. Fry until crisp and brown about 1 1/2 minutes on each side. Serve with applesauce and bacon or ham. |
