SPINACH CASSEROLE 
2 c. finely chopped cooked spinach
Salt and pepper to taste
2 eggs, well beaten
3 strips bacon
1 c. grated cheese
Sm. finely chopped onion
Dash of nutmeg
3 tbsp. fine bread crumbs, cracker crumbs, or bread stuffing

Cook spinach, drain well. Add cheese, onion, salt, pepper, nutmeg, and beaten eggs. Turn into buttered casserole dish. Sprinkle bread crumbs on top; then place bacon strips on top. Bake uncovered at 350 degrees for 45 minutes or until firm.
