LOBSTER FRITTERS 
1 c. flour
1 tsp. salt
1 tsp. baking powder
2 eggs
1/4 c. milk
1 tbsp. melted vegetable shortening
1/2 tsp. cayenne pepper
1 lb. lobster from tails, cut in chunks

Sift dry ingredients together. Add beaten eggs, milk and shortening. Stir together and add the lobster meat. Fry in deep fat (365 degrees) for 4-5 minutes. Serve with green salad or avocado, grapefruit and lettuce.
