BOURBON SWEET POTATOES 
4 lbs. yams
1/2 c. butter, softened
1/2 c. bourbon
1/3 c. orange juice
1 tsp. salt
1/2 tsp. apple pie spice
1/3 c. chopped pecans or nuts
1/4 c. firmly packed brown sugar

Place potatoes in large bowl; mash. Add butter, bourbon, orange juice, brown sugar, salt and apple pie spice; beat until fluffy, smooth. Spoon into a buttered 6 cup baking dish (or a Pyrex pie plate) and swirl. Sprinkle nuts around edge to look like crust. Bake in oven at 350 degrees for 45 minutes or until lightly browned.
