MINCEMEAT BREAD 
1 1/2 c. sifted flour
3/4 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
2 eggs, beaten slightly
3 tbsp. shortening, melted, cooled
1 tsp. vanilla
1 1/3 c. mincemeat
1/2 c. chopped nuts, your choice

Grease 9x5 inch loaf pan; preheat oven to 350 degrees.

In large bowl, mix flour, sugar, baking powder and salt. In medium bowl, mix eggs, shortening and vanilla. Mix in mincemeat and nuts. Pour egg mixture into dry mixture, stir only until all moist. Pour into loaf pan; bake about 50 to 55 minutes or until a toothpick comes out clean when inserted in center of bread. Cool 10 minutes in pan. Cool on rack. Makes 1 loaf.
