CORN FLAKE NUT MERINGUES 
Vegetable cooking spray
1 egg white (room temperature)
Pinch salt
1/2 c. sugar
1/2 tsp. vanilla
8 walnut halves, chopped
1 c. corn flakes

Spray a nonstick baking sheet generously with vegetable cooking spray. Beat egg white in large bowl. When the white begins to get frothy, beat in salt and add sugar slowly, a tablespoon at a time. Beat until the mixture stands in stiff peaks. Blend in vanilla and gently fold in nuts and corn flakes. Take a heaping teaspoon of mixture and push onto baking sheet with another teaspoon; repeat until all mixture is used. Bake at 275 degrees for 25 minutes or until surface is very dry, don't allow to brown. Remove for pan with spatula while still warm. When cooled, store in air tight container. Makes approximately 24.
