SPINACH DIP 
1 pkg. frozen chopped spinach
1 c. mayonnaise (Hellmann's or Hellmann's Lite)
1 c. sour cream (can use non-butter fat alternatives "Kings")
1 pkg. Knorrs dry vegetable soup mix
1/2 sm. onion, chopped
1 can sliced water chestnuts, chopped

Thaw spinach. Squeeze out excess water. Combine ingredients. Refrigerate overnight. Serve cold or hot on crackers, vegetables or bread.

Suggestion: Serve in hollowed out head of red cabbage. Hollow out loaf of rye or pumpernickel bread. Fill with dip. Arrange pieces of bread around. Heat in oven or serve cold.
