DAD'S REFRIGERATOR PICKLES 
3 c. sugar
4 c. vinegar
1/2 c. salt, not iodized
1 1/3 tsp. turmeric
1/8 tsp. mustard seed for each pint
3-4 med. onions, thinly sliced
3-5 cucumbers, sliced 1/4 to 3/8 inch thick
3-5 pt. size canning jars

Mix sugar, vinegar, salt, and turmeric together. Fill jars about 1/4 full with sliced onions. Fill jars rest of the way with firmly packed cucumbers. Add mustard seed to each jar and pour vinegar mix to top of jar. Refrigerate at least 5 days before using.

No mess of sterilizing or heading jars. Makes 3-5 pints (depending on size of cucumbers).
