SMOTHERED LIVER WITH ONIONS 
1 lb. beef liver
Salt & pepper to taste
1 c. flour
1/4 c. shortening
1 lg. onion
3 c. hot water

Salt, pepper and flour liver. Place in heated shortening. Brown on both sides. Add sliced onion. Add hot water. Simmer for 1 hour or until tender. Serves 4.
