GREEK SALAD 
5 lb. ripe tomatoes, cut into bite size pieces, 1 inch chunks
2 med. cucumbers, peeled and cut into 1 inch chunks, about 1/2 inch thick
3 lg. green peppers, cut into 1 inch chunks
1 can sm. pitted black olives, drained
1 med. red onion, sliced into thin rings
1 c. good Italian dressing (a Dijon mustard dressing also works well)
Sprinkle of fresh cracked black pepper; optional

Cut tomatoes into bite size chunks. Add cucumbers chunks, green pepper chunks, drained whole, small black olives, and red onion slices. Pour dressing over ingredients and refrigerate for 1 hour before serving.
