WHITE CLAM SAUCE FOR PASTA
1/4 c. butter
1 garlic clove, minced, or 1/4 tsp. garlic powder
2 tbsp. flour
2 c. clam juice
1/4 c. chopped fresh parsley or dried parsley
Black pepper to taste
1 1/4 tsp. thyme
2 c. minced clams, fresh or canned

Cook the garlic in butter over moderate heat. With wire whisk, stir in clam juice (I use water to fill to 2 cups) and flour. Add parsley, pepper and thyme; simmer gently for 10 minutes. Add clams and heat through. Serve over your favorite pasta. Makes about 4 servings.
