SHOESTRING POTATO SALAD 
1 c. grated carrots
1 c. chopped celery
1/4 c. chopped onion
1 c. meat (shrimp, tuna, crab, etc.)
1 c. salad dressing

Mix and let set 1 hour and then add 1 can shoestring potatoes just before serving.

NOTE: A lot of people ask for this recipe after our UMW luncheons, but I don't know whose it is. I got it from Dode McRae many years ago.
