GARDEN CLUB SPINACH QUICHE 
1 unbaked pie crust
3 eggs or Eggbeaters
1 c. shredded cheese (any type Swiss or Cheddar)
1 c. cottage cheese (small curd)
1 (10 oz.) pkg. frozen chopped spinach
1 stick butter, melted
1 sm. onion, chopped
1 dash nutmeg
1 dash cayenne pepper or red hot sauce

Cook spinach 6 minutes in microwave and drain thoroughly. Add onion and melted butter to spinach in a mixing bowl. Add beaten eggs and rest of ingredients. Mix together and pour into pie crust.

Bake at 350 degrees for 35 to 40 minutes or until golden brown and set. Ham bits may be added to the mixture. 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
