2 c. dates, pitted and chopped 1 c. sugar 1 c. boiling water 1 c. pecans, chopped STEP 2: 1 c. Crisco 1 c. white sugar 1 c. brown sugar 3 eggs 4 c. flour 1/2 tsp. baking soda 1/2 tsp. salt 1 tsp. vanilla Cook dates, sugar and water slowly until thick. Add pecans. Set aside to cool. Cream Crisco, sugar and eggs. Mix well. Sift flour, soda, salt and add to creamed mixture. Blend well. Add vanilla, stir. Divide dough into 4 equal parts. Roll 1 part at a time 1/2 inch thick. Spread with date filling and roll up as for jelly roll. Wrap each in waxed paper. Place on cookie sheet, chill thoroughly, overnight if possible. Cut into slices 1/2 inch thick. Place on greased baking sheet. Bake 400 degrees for 10-12 minutes. Makes 5 dozen. May freeze and cook as needed. |
