JELLY COOKIES 
2 c. flour
2/3 c. sugar
1/2 tsp. baking powder
3/4 c. butter (don't substitute butter)
1 egg
2 tsp. vanilla
Jelly or preserves (such as apricot or raspberry)

Combine flour, sugar and baking powder in a mixing bowl. Blend in butter with a pastry cutter. Add egg and vanilla. Mix to form dough. If dough is very soft, chill.

Divide dough into 4 parts. Shape each into a 13-inch rope about 3/4 inch thick. Place two rolls at a time on an ungreased cookie sheet. Using the blunt end of a knife, make an indentation down the center of each roll.

Fill indentation with jelly. Bake at 350 degrees for about 15-20 minutes. Cool no more than 5 minutes before cutting. Cut diagonally. Cool completely.

Kids like plain sugar. You can use your imagination here. Raspberry jam with coconut is delicious and so is chopped walnuts with honey.
