FRITATTA 
1 c. ricotta cheese
3 c. grated zucchini
3 eggs
1/2 c. bread crumbs
2 tbsp. olive oil
Salt, pepper & oregano to taste
1/4 c. walnuts or pine nuts
1 jar marinara sauce

Combine ingredients. Spread in 9 x 13 inch pan. Bake for 1 hour at 350 degrees. Cut into large portions and top with marinara sauce. top with grated dry cheese. Serve with tossed green salad.
