WHOLE WHEAT PRETZELS 
1 pkg. dry yeast
3 c. whole wheat flour
1 c. unbleached flour
1/4 c. wheat germ
4 tsp. brown sugar
Salt to taste (optional)
3/4 c. hot water
1 egg, lightly beaten
Sesame seeds

Put yeast in bowl, add flours, wheat germ, sugar and salt. Add water and mix until dough forms a ball. On lightly floured board, knead dough 5 minutes until smooth and elastic. Break off walnut-sized pieces and roll in hands to form rope and shape into pretzels. Preheat oven to 425 degrees. Brush some beaten egg over each pretzels. Sprinkle with sesame seeds. Transfer to lightly greased baking sheets. Bake 10-12 minutes until browned. Cool before serving. Makes about 2 dozen.
