SOUTH OF THE BORDER SALAD | |
DRESSING: 3/4 c. mayonnaise 3/4 c. chili sauce 1 tsp. chili powder 1 tsp. Tabasco 2 tsp. Beau Monde seasoning It is not as good without this Beau Monde. 1/2 c. sliced pitted black olives 1 c. grated cheddar cheese 2 c. corn chips Seasoned salt and pepper 1 lg. avocado, dipped in lemon juice 1 sm. purple onion Mix dressing early in the day and refrigerate until serving time. Break lettuce into bowl. Sprinkle with olives, cheese, corn chips, salt and pepper. Peel avocado and dip in lemon juice to prevent darkening before adding to salad. Slice onion in thin rings and add. Toss gently with dressing and serve. Serves 8. (I don't add the chips until ready to serve, get soggy). |
